I really love eggs
I love sweet potato
Combine them together and you’ve got a filling, satisfying meal that can easily be added on to and adapted.
This recipe actually comes from PaleoCookBooks
- 2/3 cup sweet potato cut into bite size pieces
- 2 eggs
- 2 rashes of bacon, diced using meat only
- 1tbs oil
- 4tbs dill, finely chopped
- 2tbs mayonnaise
- 2tbs lemon juice
boil the eggs – when done, peel and dice and set aside
Boil sweet potato until cooked through – drain and set aside
Cook bacon in olive oil over med heat, until crispy
in a separate bowl combine mayo, dill, and lemon juice. You can use this recipe to make your own mayo
Place eggs, sweet potato, bacon and mayo into a bowl and combine well
Serve and enjoy!
Seems too simple, right, but it makes a great filling meal. One of the easiest ways to change this up is to add a grilled chicken breast to it. Add some spring mix along with it to make it even more nutritious and dense.
For the slow-carbers worried about the sweet potato I would recommend this being an after workout meal. That way you can justify the sweet potato carbs.

***EDIT*** Earlier today I had some questions regarding whether sweet potatoes were really paleo-approved. Here’s my opinion, they can be eaten, depending on your ultimate goal. If you have significant weight loss you are trying to achieve you would best limit them to an occasional cheat or with a meal, if you are just eating generally healthy or maintaining body comp, then no more than 2 times/week should be okay.
