I’ve been working on it, but they’ve been somewhat resistant to my attempts.
- 1 C of pecans
- 1 C of almonds
- 1 C of brazil nuts
- 2 tbsp melted butter
- raisins, or other no sugar added dried fruit (optional)
- other fresh fruit – such as blueberries, raspberries, banana slices (optional)
- 1/4 – 1/2 C of almond milk or coconut milk (warmed if preferred)
Put all nuts into a food processor and pulse until ground to your preferred consistency – but do not grind it into a “butter”. You want the nuts to still have loose consistency. Slowly add in melted butter and continue processing for approximately 5 more seconds.
Take a couple scoops into a bowl, add raisins or other fruits if using, couple dashes of cinnamon and warmed almond or coconut milk to your desired consistency.
Eat as you would regular oatmeal.
This was an awesome breakfast – my little girl devoured it, without question.
Now I know there are some purists out there that don’t believe you should be “paleo-fying” foods that we already deem unhealthy. But I believe most of these people don’t have kids. So, if “tricking” my kid into eating better by paleo-fying one of their favorite foods works – then I will continue it!
